Lean, flavorful and just plain healthy, elk meat is lower in fat and cholesterol than skinless chicken or fish. Our elk are grass raised and grass finished and seasonally supplemented with hay. Our elk meat is the most heart healthy and best tasting of the red meats. In 2001, the couple adopted a long-term and whole-system approach to the health of the land and the animals in their sustainable operation. Pastures are part of an erosion control system and are maintained with organic fertilizers. The elk processed for meat are free of antibiotics and are grass-fed. This year, Hawk’s Hill’s processed elk meat won all of the five national and international competitions the Espes entered. The Epes raise elk in a humane manner and have brought Third Party Humane Slaughter Certification to Wisconsin packing plants. Joel is president of three national organizations, including a charity for children with disabilities and life-threatening diseases. He will be a featured speaker this summer for the USDA at an International Animal Health Symposium in Utah.
